Vegan Lebanese Tofu Shish

Super easy to prepare, and bursting with flavour, this is one seriously lip-smacking Lebanese feast of a shish! Just whip up our easy yoghurt marinade and let our Cauldron Authentic Tofu soak up all the flavour, before griddling your Middle Eastern inspired tofu kebab chunks to perfection.

Ingredients:

For the tofu shish

  • 1 x 396g pack of Cauldron Authentic Tofu

  • 4 tbsp plain soy yoghurt

  • 1 tbsp tomato puree

  • 2 tbsp lemon juice

  • 3 cloves of garlic, crushed

  • ½ tsp turmeric

  • ½ tsp ground cumin

  • ½ tsp ground black pepper

  • ½ tsp sea salt

  • 1 tsp cayenne pepper

  • 1 tsp ground paprika

  • 1 red onion, chopped into chunks

  • 1 red pepper, chopped into chunks

  • 1 yellow pepper, chopped into chunks

  • 2 tbsp olive oil

For the harissa sauce

  • 4 tbsp plain soy yoghurt

  • 1 clove of garlic, crushed

  • 1 tbsp harissa paste

  • 1/2 tbsp lemon juice

  • Salt and pepper to taste

For serious flavour, prepare and marinate your tofu overnight!

Method:

  1. Prepare your Cauldron Authentic Tofu block by draining, then pressing for 20 minutes. Once ready, cut into 2cm squares.

  2. Mix the yoghurt, tomato puree, lemon juice and garlic in a bowl. Add the turmeric, cumin, black pepper, salt, cayenne pepper and paprika and stir until combined. Add the tofu and stir to combine. Refrigerate for 30 minutes.

  3. Meanwhile, prepare the harissa sauce by combining the ingredients in a bowl and seasoning to taste. Cover until required.

  4. Brush a griddle pan with 1 tbsp olive oil and heat on medium - high. Place the red onion, red & yellow peppers on the griddle and cook for 5 minutes, stirring occasionally, until even griddle marks appear. Remove from the pan and repeat this process with the prepared tofu.

  5. Divide the griddled tofu and vegetables between four plates and serve with the harissa dressing and your choice of sides.
