Brothy Rice with Crispy Tofu

This brothy rice with crispy grated tofu makes the most lip-smacking dinner! Made with Cauldron Extra Firm Tofu, which is seasoned then baked until crispy, a sticky rice and a delish broth. This flavourful, easy to make dish gives all the right dinner vibes.

Ingredients:

  • 60g Cauldron Extra Firm Tofu

  • 1 tsp smoked paprika

  • 125g rice

  • 1 low salt vegetable stock cube

  • 1 garlic clove, grated

  • 3g ginger, thinly sliced

  • 1 spring onion, sliced (saving a few slices for garnish)

  • ½ small carrot, thinly sliced

  • ½ red onion, thinly sliced

  • A few sprigs of fresh coriander and mint

To garnish

  • Sliced red chilli

  • Sliced spring onion

This dish is perfect for using up any leftover rice too!

Method:

  1. Preheat oven to 170˚

  2. Onto a lined baking tray, grate your Cauldron Extra Firm Tofu with the larger holes of a grater straight onto the baking tray. Sprinkle over the smoked paprika, mix through and pop in the oven for 20 minutes until golden and crispy.

  3. Meanwhile add 200ml of water to a pan and bring to the boil, drop in your stock cube, garlic, ginger and spring onion and boil for 5 mins. Optionally, you can strain the broth to remove the loose spring onion, garlic, and ginger, but this is not essential.

  4. Thinly slice your carrot and red onion and set aside.

  5. Cook the rice as per instructions on the pack.

  6. Now it's time to build, place your rice in the center of a bowl, then pour over the broth. Top with the crispy tofu, carrot, red onion and herbs. You can also add a few slices of red chilli if you like it hot and some spring onions too. Enjoy!
