Sweet Chilli Tofu and Broccoli Stir Fry
Four steps to foodie heaven for this Sweet Chilli Tofu and Broccoli Stir Fry. Mix the sauce. Fry off a pile of veggies and Cauldron Marinated Tofu Pieces. Toss with extra sauce, cashews and noodles. Tuck in and wonder what you’re going to do with all that time you’ve just saved whipping up this easy sweet chilli tofu stir fry.

Ingredients:
1 x 160g pack Cauldron Marinated Tofu
2 tbsp. sweet chilli sauce
1 lime, juice only
1 glove garlic, crushed
A drizzle of sesame oil
100g purple sprouting broccoli, florets
1 red pepper, sliced
4 spring onions, sliced
150g cooked egg noodles
10g cashew nuts
To garnish… (optional)
Nigella seeds
Chilli flakes

Swap the Cauldron Marinated Tofu for Cauldron Hoisin Tofu and the sweet chilli sauce in this recipe for hoisin sauce for a change.
Method:
Place the sweet chilli sauce, lime juice and garlic in a small bowl. Add one tablespoon of water and mix well. Set to one side.
Heat a drizzle of sesame oil in a non-stick frying pan or wok over a medium-high heat. Add the Cauldron Marinated Tofu Pieces, broccoli, red pepper and spring onions. Stir-fry over a medium-high heat for 4 minutes.
Add the prepared sauce, egg noodles and cashew nuts. Toss to combine and stir-fry for a further minute.
Divide between 2 warmed serving dishes. Garnish with a pinch of nigella seeds and chilli flakes.
