Sticky Korean BBQ Tofu Stir-Fry
This vegan Sticky Korean BBQ Tofu Stir-Fry recipe is THE most lip-smacking dish you’ll enjoy this week! Ingredients:
1 x 160g pack Cauldron Marinated Tofu
1 tbsp. BBQ sauce
1 tsp. gochujang paste
1 tbsp. rice vinegar
2 garlic cloves, crushed
½ tbsp. cornflour
A drizzle chilli oil
1 mild red chilli, de-seeded and sliced
75g mange tout, sliced
50g frozen edamame beans
50g spinach leaves
To serve…
250g cooked sticky rice

Swap the sticky rice side for noodles for a change.
Method:
Place the BBQ sauce, gochujang paste, vinegar and garlic in a small bowl. Mix the cornflour with one tablespoon of water and add to the bowl. Mix well and set to one side.
Heat a drizzle of chilli oil in a non-stick frying pan or wok over a medium-high heat. Add the Cauldron Marinated Tofu Pieces, chilli, mange tout and edamame beans. Stir-fry over a medium-high heat for 2 minutes.
Add the prepared sauce and stir-fry for 2 minutes.
Add the spinach leaves and stir-fry for a final minute.
Divide between 2 warmed serving dishes and serve with your sticky rice.
