Tofu Summer Rolls
Roll with it this summer. By which we mean roll out the vegetarian summer rolls, or more specifically, Tofu Summer Rolls. Made with Cauldron Hoisin Tofu Pieces and wrapped in rice paper (no buns, hun) it’s bright, beautiful, and blooming tasty.

Made with our Hoisin Tofu Pieces
Ingredients:
1 x 160g pack Cauldron Hoisin Tofu Pieces
3 large rice paper wraps
1 tbsp cooking oil
3 lettuce leaves
Sliced mixed vegetables (we’ve used red and yellow peppers, spring onions, cucumber, carrot and red cabbage)
For the dipping sauce
2 tbsp hoisin sauce
1 tbsp plant based peanut butter
1 tsp sesame oil
1 tsp crispy chilli oil
Method:
First fry the Hoisin Tofu Pieces in the oil for about 5 minutes, stirring occasionally, until the pieces are golden and a little crispy
Whilst the tofu is cooking, slice up the vegetables and mix up the ingredients for the dipping sauce
Dampen a clean tea towel and place it on a chopping board. Fill a bowl with water. Dip the rice paper wraps in the water for about 15 seconds until they start to soften then lay them on the tea towel and fill with the vegetable sticks and tofu. Top tip…if you place a lettuce leaf in the wrap first it makes them easier to wrap up too
Serve the Summer rolls with the dipping sauce and enjoy
