Shredded Tofu Tacos

Fill your boots, or even better your tacos. These lip-smacking shredded tofu tacos are bursting with fresh flavours! Made with Cauldron Authentic Tofu, these Shredded Tofu Tacos are a bit of a mouthful to say and an irresistible mouthful to eat. A simple swap to a plant-based mayo makes this delish tofu taco recipe totally vegan too!

Made with our Authentic Plant-Based Tofu

Ingredients:

  • 1 x 396g block Cauldron Authentic Tofu 

  • Olive oil 

  • 1tsp ground coriander

  • 1 tsp ground cumin

  • 1tsp smoked paprika

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Juice of 2 limes

  • 1 red onion 

  • 50g cashews

  • 1 avocado 

  • Fresh coriander

  • Mayonnaise 

  • Chipotle sauce/paste 

  • 5-6 corn tortillas 

  • Red cabbage

For a fully vegan recipe, just swap out the mayo for a plant-based one!

Method:

For the shredded tofu

  1. Press and grate your block of Cauldron Authentic Tofu

  2. Spread the grated tofu onto a large baking sheet/tray and drizzle with 2 tbsp oil

  3. To the tray add 1 tsp of ground coriander, ground cumin, smoked paprika, salt, garlic powder, onion powder and mix well

  4. Bake at 200 C for 10-15 mins (until crispy) stirring at intervals

  5. Drizzle with lime juice to finish it off

For the pickled onions

  1. Chop a red onion into half moons

  2. Add the juice of one lime and 1/2 tsp salt

  3. Leave to sit while you prepare everything else

For the cashew crema

  1. Soak 50g cashews boiling water for 10 mins to soften, then drain

  2. Add the cashews, 1 avocado, juice of one lime, 2 tbsp water and a handful of coriander leaves to a food processor. Blend until you get a creamy sauce

For the chipotle mayo

  1. Mix together your mayo (use plant to keep the recipe vegan if needed) with chipotle sauce or paste according to taste

To serve 

  1. Serve all the components up with your corn tortillas and shredded red cabbage
