Falafel Traybake Tacos
Spice up your evenings with these Traybake Falafel Tacos. So simple, easy AND packed with flavour.
Spiced courgette, aubergine, red pepper and onion are cooked until golden then loaded into a warm tortilla with harissa yogurt, lettuce and perfectly cooked Cauldron Middle Eastern Falafel. It's a flavour-packed feast at your fingertips!
Made with our Middle Eastern Plant-Based Falafels
Ingredients:
1 x 200g pack Cauldron Middle Eastern Falafels
8 small tortilla wraps
1 red pepper
2 small red onions
1 courgette
1 aubergine
200g chickpeas
3 tsp ras el hanout
2 tsp turmeric powder
1 tsp black pepper
4 tbsp low fat Greek yoghurt
1 tbsp harissa paste
100g iceberg lettuce, shredded
Parsley leaves to garnish

This dish can be made vegan by swapping to a plant based yoghurt.
Method:
Preheat your oven to 180˚C.
Chop the red pepper and onion into thin strips and the courgette and aubergine into small chunks, then add to a lined baking tray. To this, add the chickpeas, ras el hanout, turmeric and black pepper. Give everything a good mix then pop in the oven for 10 mins. After 10 mins add the Cauldron Middle Eastern Falafels on top of the veggies and cook for a further 12 minutes.
Meanwhile, mix together the yoghurt and harissa paste to make a spicy sauce.
Once the falafels and vegetables are cooked, warm your tortillas in a pan then stack up ready to serve.
Load up each tortilla with harissa yoghurt, lettuce, roasted veggies and falafel. Finish with a few parsley leaves and enjoy!
