Falafel Gyros with Homemade Tzatziki

Ingredients:

  • 6 Cauldron Middle Eastern Falafels

  • 100g cucumber

  • 2 tbsp low fat Greek yoghurt

  • 1 garlic clove, crushed 

  • 1 small preserved lemon, diced 

  • ¼ tsp sumac

  • 2 flat bread wraps

  • 25g cos lettuce, shredded

  • 50g mixed tomatoes, sliced

  • ½ small red onion, sliced

To garnish

  • A handful of mint 

  • 2 lemon wedges

  • 1 tbsp. pomegranate seeds

Method:

  1. Pre-heat the oven to 180°C (fan)/ 200°C electric/Gas Mark 6.

  2. Place the Cauldron Middle Eastern Falafels onto a baking tray. Cook for 12 minutes.

  3. To make the tzatziki, slice the cucumber in half. Grate half of the cucumber and place in a small bowl. Slice the remaining cucumber into strips and reserve for serving.

  4. Add the yoghurt, garlic, preserved lemon and sumac to the grated cucumber. Mix well.

  5. To assemble, divide the tzatziki between the wraps. Top with lettuce, and reserved sliced cucumber.

  6. Crumble the warm Cauldron Falafel between the wraps.

  7. Top with sliced tomatoes and sliced onion.

  8. Garnish with mint leaves, lemon wedges and pomegranate seeds.
