Scrambled Tofu & Avocado on Toast

Our Vegan Scrambled Tofu and Avocado on Toast recipe will cause a scramble for the breakfast table...! Cauldron Authentic Tofu, crumbled and scrambled, served up on tasty sourdough toast with spinach and avocado. Easy, peasy!

Ingredients:

  • 150g Cauldron Authentic Tofu

  • 2 tbsp. oat milk

  • ¼ tsp. turmeric 

  • 2 slices sourdough bread 

  • 5 sprays low calorie spray

  • 50g spinach leaves

  • ½ small avocado, thinly sliced 

To serve

  • 1 drizzle of olive oil (optional)

  • ½ mild red chilli, sliced

Our tip

Perfect for breakfast, brunch and even as a quick and easy light lunch. Serve on toasted vegan English muffins or croissants for a change. 

Method:

  1. Crumble the Cauldron Authentic Tofu into a small non-stick saucepan. Add the oat milk and turmeric and mix to combine.

  2. Place over a medium heat and cook for 2 minutes to warm though.

  3. Heat a griddle pan over a high heat. Toast the sourdough for 2 minutes on each side.

  4. Spray the cooking spray into a non-stick frying pan, place on a medium heat add the spinach and wilt for 1 minute.

  5. Place a slice of sourdough on a serving plate. Top with wilted spinach and sliced avocado. Spoon over the tofu scramble. Garnish with chopped chilli and an extra drizzle of olive oil!
