Italian Style Green Bean, Potato & Tomato Salad

Ingredients

1 x 160g pack of Cauldon Marinated Tofu Pieces

  • 225g French beans, tailed and cut into half
  • 225g baby new potatoes (Jersey or Lincoln)
  • 12 cherry tomatoes, halved
  • 2 tbsp freshly squeezed lemon juice
  • 4 tbsp olive oil
  • 1 clove garlic, crushed
  • Handful fresh chopped thyme leaves
  • Salt and freshly ground black pepper

Stunning salad packed with flavour and colour.

Method

  1. Cook the beans in boiling water for 5-7 minutes or until tender. Drain and refresh in cold water, reserve.
  2. Cook the potatoes in boiling salted water for 10-15 minutes or until tender.
  3. While the beans and potatoes are cooking, mix together the lemon juice, oil, garlic and thyme, season to taste.
  4. Toss the tomatoes, beans, potatoes and marinated tofu pieces together and drizzle over the dressing.
